I have a 1999 BMW E39 that I want to upgrade the entire sound system in. One problem with that car is that the airbox is behind the stereo which limits which head units fit as the depth is limited and I can't find any head unit that meets all my requirements while being able to fit. After doing some research I found the possibility to build my own using OpenAuto Pro and a Raspberry Pi which I think sound like a fun project. I do have quite a few questions though that I haven't been able to find an answer to yet so I thought I'll ask here.
My plan is to use a AudioControl DM-810 DSP to control the entire system. My first question is if there are any high quality sound cards for the Pi that allows me to connect to the mentioned DSP while providing high quality sound output? I want to be able to stream sound through Spotify as well as to play high quality FLAC-files through a USB, are there any good sound cards for this without problems such as crackles?
My next question is if you guys know any high quality touchscreen with good colors and wide viewing angles that works well with the Pi and OpenAuto that fits well in a regular double-din head unit mount or a wider one that fits in the E39 opening?
I'm also wondering if it's possible to install Spotify & Google Maps directly on OpenAuto and only use the phones Bluetooth for phone calls and WiFi access point for network or if that's only used through Android Auto?
Which Bluetooth card should I use? I've read that some doesn't support phone calls.
I'll mention a few extra questions below and would appreciate answers on these as well but I haven't researched these yet.

2. Which is the best way to go about adding graceful shutdown? I've read about options like buck-converters and timer-circuits
3. Are there any good high quality mics I can use for phone calls?
