Just throwing this out there, I have a DVR system my vehicles cameras are connected to that will allow me to view my cameras through ethernet, Im just starting research but it looks to be fairly easy to steam video to the pi from a DVR. So here's my idea.
I have a device (https://www.ebay.com/itm/273907868352) that takes my cameras and displays them based on if I'm turning or in reverse. If I took this, plugged it into a DVR to record 360 around my vehicle while I'm driving and output that video to the pi via ethernet? I can work with some code and programs but I am fairly new so anyone with information on making this work it would be great if you could dump any info here, not only to help me out but to hopefully help out future users with the same idea.
My pi had a defective SD card reader and ended up capping out on me so my return is in the mail. Once I get my pi back I'll do some more research and keep everyone updated.
